We are delighted to offer the new 2020 vintage of enduring favourite Cervaro della Salla which has just arrived at our warehouse. In our opinion, this is one of Italy’s most iconic white wines, and worthy of a place in any cellar.
The first vintage of Cervaro to be commercially released was the 1985 vintage. At the time, it was one of the first Italian whites to adopt Burgundian winemaking and employ malolactic fermentation and aging in new barriques. Traditionally it is a blend of Chardonnay (90%) and a small quantity of Grechetto (10%) to complete the final wine. The Chardonnay (aged in barrel) adds weight, texture and fruit, the Grechetto (handled entirely in stainless steel) brings energy and freshness.
Cervaro della Sala in 2020 is yet to be review by major writers and commentators. However, having tasted it earlier today in the office, we found it to be another classic Cervaro, continuing the shift to a more elegant white with deft and restrained use of oak and a focus on purity and tension.
On the nose, there are notes of both citrus & orchard fruit that blends with subtle hints of honey and almonds. A rich, mineral palate opens with crisp notes of peach and saltiness from the Grechetto, later presenting light notes of vanilla. Long and clean finish and the structure to age 10 years with ease.
